RECIPES: COWBOY CARTER RAVIOLI
Basic Pasta Dough Ingredients:
- 400 grams of flour
- 4 large eggs
For the Dough –
- Place the flour on a flat work space and make a deep well in the middle. Crack the eggs into the well and use a fork to scramble. Begin incorporating the flour and mixing it with the eggs until most of the lumps are gone.
- Continue combining the flour and eggs until you can form a loose ball of dough. If the dough is very sticky, add a spoonful of flour. Knead the dough for about 10 minutes until you can form a smooth ball. Cover the dough and let rest for 30 minutes before using.
Color Variations
- Black Dough – Follow the above recipe but add 2 tablespoons squid ink powder to the eggs before scrambling.
- Brown Dough – Follow the above recipe but use 200 grams of flour, 2 large eggs, and add 1 tbsp cocoa powder to the eggs before scrambling.
- Red Dough – Follow the above recipe but use 200 grams of flour, 2 large eggs, and add 1 tbsp beetroot powder to the eggs before scrambling.
- Yellow Dough – Follow the above recipe but use 200 grams of flour, 2 large eggs, and add 1 tbsp turmeric to the eggs before scrambling.
- Blue Dough – Follow the above recipe but use 200 grams of flour, 2 large eggs, and add 1 tbsp blue spirulina powder to the eggs before scrambling.
- White Dough – Follow the above recipe but use 200 grams of flour and 100 ml milk instead of eggs.
MAKE THE RICOTTA AND PECORINO FILLING
Ingredients:
- 2 cups whole milk ricotta
- ¼ cup grated Pecorino Romano
- 2 tsp. lemon juice
- 1 tsp. salt
For the Filling –
- Combine ingredients thoroughly with a fork, then place in piping bag.
ASSEMBLE THE RAVIOLI
- Roll the black pasta dough through a pasta machine until it is the second or third thinnest width (or about 1 mm if rolling by hand). Place pasta sheet on your work station.
- Roll the other colors to the second thinnest setting on your pasta machine. Cut out shapes for each color to create the design.
- Place each shape on the sheet of black pasta dough. If the dough does not stick, brush on a small amount of water to act as a glue.
- When the design is finished, roll out another sheet of black pasta dough.
- Pipe the filling onto the new pasta sheet in a flat square about 3 inches by 3 inches.
- Brush a small amount of water around the filling. Place the pasta sheet with the design on top and use your fingers to seal the edges around the filling. Cut out a 4 inch by 4 inch square around the filling.
- Cook in salted, boiling water for 4-5 minutes until tender.
